Oh. My. Gosh. This Klutz in the kitchen just found a keeper of a recipe: 21 Day Fix friendly Roast Chicken Beasts with Garbanzo Beans, Tomatoes, and Paprika.

It’s funny that they just mention paprika in the recipe, because it is not the only spice making nice with my taste buds!

Why this recipe? Well, the true answer is a bit embarrassing. Today, on the shooting schedule for “For the Health of It”, was an episode on the benefit of preparing home-cooked meals over fast-food, eating-out, and convenience meals. I am not the most competent cook (thus this series.) And yet, I had to set up a meal!

I knew I had chicken, some beautiful organic grape tomatoes (thank you, Aldi), beans of every kind, and a ton of delicious spices. I didn’t want to risk chopping any ingredients during the shoot, or use sharp utensils of any kind. It was safer for everyone if I stuck to these rules. I didn’t trust myself to be able to prep a meal and talk at the same time.

That was a smart move.

I found this amazing recipe during a simple google search of the ingredients I had on hand. It was the perfect culinary muse for a video shoot! And originally created by the Bon Test Kitchen? That made me feel kind of bad-ass.

(Until I realized how simple it was to replicate!)
