This may seem like an odd column for the day after Christmas. Shouldn’t I be spouting off about the importance of setting smart health and fitness goals for the New Year?
I can’t. I’m too excited.
See, I made my own coconut milk.
Now, before you express awe and hail me as some brilliant natural chef, I’ll humbly admit that this recipe has all of two ingredients.
Not that impressive. Perhaps consider the fact that it was super gratifying to make myself and simply pretend to be inspired.
Why coconut milk? Aside from coconut being highly nutritious and rich in fiber, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous, there are a few others reason I chose to tackle making this nut milk over other varieties (and you’ll laugh at the choice of the word “tackle” upon seeing the recipe.)
